Spicy Beef Pea-cos

INGREDIENTS

  

1 cup of frozen peas, defrosted

1 x onion, chopped

1 x garlic clove, crushed

1 x green pepper, de-seeded and chopped

1/2 teaspoon chilli flakes & mixed herbs

200g minced beef

1 x tablespoon tomato puree

4 x taco shells

50g grated cheddar cheese

salt & pepper

1/2 tablespoon vegetable oil

100ml cold water

method

  1. Heat a frying pan or wok with the oil, add the onion, garlic and pepper and cook for 3-4 minutes until soft.
  2. Sprinkle on the chilli and herbs and add the minced beef. Cook for 4-5 minutes until the meat is browned.
  3. Add the tomato puree, water and seasoning (a pinch of salt & pepper) and bring to a simmer. Simmer for about 15 minutes until the liquid has been absorbed. 
  4. Blend the peas in a blender until they are finely chopped up. 
  5. Heat the taco shells as per the pack instructions.
  6. Spoon the spicy meat mixture into each taco shell. Top with the peas and sprinkle on the grated cheese.
